Casey Dry Hopped Oak Theory (Nelson)

Aroma: “Strong spicy notes, both from the hops and fermentation character with pine, citrus peel, black pepper. Pleasant underlying tartness with a hint of wood character.”

Flavor: “Strong ripe peach with white grape. Low sweetness into intense sourness that slowly fades into the finish. Despite the intensity of the acidity, it’s not harsh. The hops character enhances the fruity sourness, adding some citrus notes. The finish is bracing, but overall complex, balanced, and intriguing.”

Overall: “Very sour, dry, leading to a brisk and puckering overall impression. Pleasant and refreshing, though some may find it hard to make it through an entire glass.”
